Ladies and gentlemen, boys and girls, people of the world — we are pleased to announce this season’s dark roast offering from our new friends at Benchmark Coffee & Bunum Wo Estate. Situated in the Western Highlands of Papua New Guinea, Bunum Wo is cultivated at an elevation of 1500 MASL where the estate values and prioritizes soil health and water conservation above all else. Certified bird-friendly, the Bunum Wo employs a medium-density shade strategy with two types of shade trees, ensuring even ripening of coffee cherries while also supporting habitats for over 90 bird species.
Undergoing a meticulous washing process that starts with hand-picking and sorting, prized peaberries are separated from the lot due to their delightful balance of sugar and acidity. Once sorted, the coffee is depulped and spends three days in fermentation with washing taking place every 24 hours, followed by an additional day of total water immersion before sun drying for an additional 21 days on raised beds. Once conditioned, the coffee undergoes multiple quality steps including destoning, milling, grading denso-metric sorting, color sorting and finally another round of hand sorting. This stellar single estate peaberry is big and bold with low acid & a rich rustic sweetness that is clean enough to enjoy black, but also plays well with dairy and dairy alternatives. All in all, an excellent choice for those looking for a traditional yet nuanced dark roast.
